Seasoning foods with fragrant herbs gives your meal added flavor and supplies you with extra potassium. According to the University of Maryland Medical Center, your body needs potassium to regulate fluid balance, maintain strong bones and keep your heart and other muscles functioning well. Many herbs are more potassium dense than other foods, meaning they contain a high amount of potassium by weight. Incorporating more of these potassium-dense herbs into your cooking will help you meet your daily needs.

Nutrient Density

Moisture is lost when herbs are dried, leaving more plant matter and less water in the dried herb. For this reason, dried herbs are a more concentrated, or dense, source of potassium than fresh herbs and many other foods. According to the U.S. Department of Agriculture, a tablespoon of dried basil contains 26 milligrams of potassium per gram, while a tablespoon of fresh basil contains only 3 milligrams per gram. Bananas, avocados, tomatoes, potatoes and salmon are the some of the highest potassium foods, but they have only 2 to 5 milligrams of potassium per gram. Dried tarragon on the other hand has 30 milligrams of potassium per gram.

Chervil

Leafy green plants are excellent sources of potassium, and green herbs fall into this category. Dried chervil is one of the most potassium-dense herbs containing 47 milligrams of potassium per gram. Parsley, often used in Italian and Middle Eastern cuisines in dishes such as pasta, soups, chicken, fish, bread and pizza, contains 37 milligrams of potassium per gram dried. Cilantro and parsley can be found in most grocery stores or try growing them in your home garden.
